White Tuna or Albacore (‘Bonito del Norte’ in Spanish) is mainly fished in the Cantabrian Sea and the Gulf of Biscay, usually during the summer months.

It is fished with the traditional method of rod and line, in order to prevent the fish from suffering, thereby achieving its unbeatable taste.

The scales are deep blue, almost black, and the fish can be a metre long.

It is a very valued and tasty fish, with white meat and a soft texture.
