The cheese used, 'Sierra de Sevil', undergoes a maturing period of at least 3 months.
Once the cheese has been matured, it is cut into cubes, and bottled in airtight jars, adding Virgin Olive Oil, as well as herbs and pepper. After it has been bottled, it is left to macerate for at least one month.
Awards: 'Sierra de Sevil' was awarded the Gold Medal at the International Food Fair in Bilbao (Spain) in 1990.
